Dinner with Chef Alessandro Gilmozzi

This June, we're excited to feature Chef Alessandro Gilmozzi in our special edition. Known as the "man of the woods”, Chef Gilmozzi leads the Michelin starred El Molin restaurant in Cavalese, Trento. Together we will walk, we will challenge ourselves, we will cook, taste and share all the best things that our Dolomites have to offer. You will discover how Chef Gilmozzi transforms the gifts of the mountains into exceptional creations. Guided by his culinary philosophy, which interprets the land through botany and collaboration with local producers, Chef Gilmozzi creates unique and innovative dishes that truly capture the essence of the Dolomites.

about Bivac

Walking among the Dolomites, declared a UNESCO World Heritage site in 2009, is an experience of pure beauty and sensory peace. This is a place of legends: you'll only need to decide whether to be captivated by the story of King Laurin - who, out of love for his daughter, decreed that the Catinaccio should turn pink at sunrise and sunset - or by the tales of climbers who pioneered the era of acrobatic mountaineering on these walls. June is also a wonderful month, ideal for foraging, an activity we will have the pleasure of experiencing with a top expert in the field.

Our journey will take place in Val di Fassa, in the presence of the majestic Torri del Vajolet, a splendid view of the eastern wall of the Catinaccio. No special athletic preparation is required; we won't do climbing or via ferrata. Instead, we will walk calmly, taking approximately 4 hours to cover around 550 meters of elevation gain, reaching the Rifugio Vajolet (2,243m a.s.l.).
